Pasquier at Rainbow Grocery Cooperative
Rainbow Grocery Cooperative is a member-owned co-op running 1 Bay Area store, large-format at about 36,996 sq ft each, indexing high on clean-organic versus other Bay Area grocers.
It’s already on the shelf here, with 1 SKU across 1 category. The growth is depth and breadth: 1 category to widen and 5 new doors to enter.
Lead with Fruit French Macarons in Macarons.
Rainbow Grocery Cooperative stocks macarons thinly, so a differentiated snack stands out instead of becoming the Nth option on a crowded shelf. It already earns space at 6 other Bay Area grocers.
Rainbow Grocery Cooperative carries other bakery desserts in real depth, 23 SKUs against a fleet median of 6, so a new entry there is the Nth option, and its per-unit price would likely sit near the top of a crowded shelf. The more differentiated opening is macarons: Rainbow Grocery Cooperative stocks only 3 there, so Pasquier Fruit French Macarons stands out rather than blending in. Lead with the macarons, and position the other bakery desserts as a finishing or gift item.
Rainbow Grocery Cooperative merchandises 8 of the 9 categories the brand sells.
